Cake Balls

Need I say more? Ever since I made these a week ago, all of my friends have heard me raving about them, a few people have made them, and everyone has asked for the recipe. I made them again tonight. I have to give credit to "thenest" girls for the passing this along. Here is the recipe and step by step pictures!! They are SOOO good:

Recipe:
Bake a cake according to the box instructions
When the cake is done, crumble it up into a bowl
Mix in a tub of frosting
Roll into balls (makes up to 50 balls)
Let cool in the refrigerator until they are hard
Melt any kind of chocolate
Dip each ball in the melted chocolate until coated
Let cool and harden in the fridge
Keep in fridge or freezer

There are endless possibilities for what kind of cake, frosting, and coating to use. The first time I made them I used Duncan Hines Yellow Cake, Vanilla Frosting, and melted chocolate chips. This time I used carrot cake, cream cheese frosting and did some coated in white chocolate, some in semi sweet chocolate. I have heard that red velvet cake is really good to use with chocolate frosting and I've also heard that Martha Stewart used chocolate cake with cream cheese frosting. Here is how I made the carrot cake ones step by step:

This is the cake before I crumbled it (acutallyI had already done one handful when I remembered I wanted to take pictures)
This is what it looks like all crumbled up. It is fun to take handfuls of cake and mush it up!
Here it is with the cream cheese frosting mixed in

Here they are after I made all of the balls, they are ready to go in the fridge to cool and harden. The original recipe says it makes 50 balls but I only got 35 out of it so maybe I'm making them a little bigger than you're supposed to.
I melted white chocolate chips and did half in that and then regular chocolate chips and did the other half. I have heard that getting actual dipping chocolate makes it easier to coat. The chocolate chips get kind of thick and makes it a little messy. I kind of push each ball around in the chocolate with a spoon. Then I drizzled some dark chocolate over the white! I put them back in the fridge to cool and harden.
And here they are on a plate ready to eat! Too bad I don't even have something special to bring these to. What are Mark and I going to do with 35 cake balls? I'm going to try freezing some to save for later.
I can't decide if I like the yellow cake ones or the carrot cake better. Both are really good. Let me know if you come up with any good combinations! Enjoy :)
